1 Position a rack in the center of the oven and preheat to 400°. Line 2
baking sheets with parchment paper. In a medium bowl, mix together
the flour blend, cream of tartar, baking soda and salt. Using a standing
mixer fitted with the paddle attachment, beat the butter on medium-high speed until light and fluffy, about 2 minutes. Add 1 ½ cups sugar
and beat for 1 minute. Beat in the vanilla and eggs until combined.
Reduce the speed to medium; beat in the flour mixture and mix until
just combined. In a small bowl, stir together the remaining ¼ cup sugar
and the cinnamon.
2 Using a tablespoon, portion out dough and roll into balls with your
hands; coat with cinnamon-sugar and place about 2 inches apart on the
prepared baking sheets.
