Meatloaf

2 tablespoons olive oil
1 small onion, finely chopped
1 carrot, grated
1 clove garlic, grated
1 ½ pounds ground turkey
¾ cup ketchup
2 tablespoons gluten-free soy sauce,
such as San-J
2 tablespoons gluten-free Worcestershire
sauce, such as Lea & Perrins
1 egg, lightly beaten
1 cup finely crushed gluten-free rice cereal,
such as Erewhon
¼ cup finely chopped parsley
Salt and pepper
Preheat the oven to 350º and grease a 9-by-
5-inch loaf pan. In a skillet, heat the olive oil
over medium heat. Add the onion and carrot;
cook until softened, about 5 minutes. Add the
garlic and cook about 1 minute. Let cool.
Meanwhile, in a medium bowl, combine
the turkey, ½ cup ketchup, soy sauce,
Worcestershire sauce, egg, rice crumbs, onion
mixture, parsley, ¾ teaspoon salt and
¼ teaspoon pepper. Place in the prepared pan,
rounding the top. Spread the remaining ¼ cup
ketchup on top. Bake until cooked through,
about 50 minutes, or until a thermometer
inserted in the center registers 160º. Let
set for about 10 minutes; cut into ½-inch
thick slices.
