8 ounces cream cheese or dairy-
free alternative, such as Galaxy

Zest of ½ lemon (about 1 tablespoon)
1 tablespoon honey
Salt
4 eggs
¼ cup milk or nondairy milk
2 ripe bananas, peeled and sliced
lengthwise ¼-inch thick
1 tablespoon butter or buttery sticks
8 slices gluten-free sandwich bread
Confectioners’ sugar, for serving

1 In a medium bowl, combine the
cream cheese, lemon zest, honey and
¼ teaspoon salt.
2 In a shallow bowl, whisk together
the eggs, milk and ¼ teaspoon salt.
3 Spread ¼-inch layer of cream
cheese mixture on 1 bread slice. Top
with one-quarter of the banana slices
and another bread slice; press lightly
to seal. Repeat with the remaining
bread slices and fillings.
4 In a large nonstick skillet, heat the
butter over medium heat. Soak the
sandwiches in the egg mixture on
both sides. Add the sandwiches to the
skillet and cook, turning once, until
golden, about 4 minutes; cut in half
diagonally and sift over confectioners’
sugar, if using.
