Goat Cheese, Walnut
and Honey Ravioli
1 recipe Basic Gluten-Free Pasta
½ cup soft goat cheese
½ cup ground walnuts, toasted
1 tablespoon honey, plus more for drizzling
2 tablespoons unsalted butter
4 tablespoons chopped fresh mint
Prepare the Basic Gluten-Free Pasta recipe, then separate into
6 pieces. Using a pasta roller, roll through the fourth setting. In a
small bowl, thoroughly mix the goat cheese, walnuts and honey.
Set a large pot of salted water over medium-high heat and bring
to a boil.
Place 1 sheet of pasta dough onto a ravioli press or a lightly
floured board. Place scant tablespoonfuls of the cheese mixture on
the dough about 2 inches apart. Top with another sheet of pasta and
press to seal around each mound, making sure no air remains. Cut
into squares, pinch to fully seal edges and set on a floured board
until ready to boil. Repeat as necessary.
Working in 2 batches, add the ravioli to the boiling water and
cook for 5 minutes or until the ravioli float. Remove with a slotted
spoon. Transfer to a clean surface to cool.
In a large skillet over medium heat, melt the butter. Add the
ravioli in a single layer and cook until brown and crisp. Turn, and
repeat on the second side. To serve, drizzle with honey and top with
